Aldrin's Iberian Chicken

1 whole chicken
one cup garlic clove, peeled
1 tsp thyme
1/2 tsp paprika
1/2 tsp smoked paprika
1 tsp rosemary
1/2 tsp sage
1/2 tsp poultry seasoning (optional)
salt and pepper
1/2 cup olive oil


  1. Marinate chicken for at least 1 hour.  Place all garlic cloves inside cavity before roasting.
  2. Roast for 1 hour at 400F [or 2 hours at 200F].
